How to Make Sugar-Free Pepper Jelly

  1. Cut open the peppers & remove the seeds.
  2. Place the cut peppers in the food processor & pulse until they are minced & nearly a paste. It’s okay to have some larger pieces left.
  3. Transfer to a medium saucepan & add the cider vinegar & sugar substitute.
  4. Cook on med-high until it comes to a rolling boil.
  5. Remove from heat & add in the pectin & food coloring. Stir to combine well.
  6. At this point, you can carefully transfer it to sterile jars and allow it to cool to room temperature before serving, refrigerating, or freezing.
