Directions
1.To make this oven-baked chicken breast recipe: Preheat your oven to 400ºF (200ºC).
2. In a small bowl, combine paprika, cumin, chicken stock, lemon juice, onion powder, oregano, garlic, chili flakes, melted butter, and olive oil. Adjust salt and lemon if necessary. Keep a little marinade on the side for adding the cauliflower rice later.
3. Add in the chicken breasts and coat all sides. Cover and marinate chicken breastsfor at least 30 minutes. When ready to cook, remove, and drain chicken breasts from marinade. Save the marinade for later.
4.Heat 1 tablespoon oil in an oven-proof skillet over medium-low heat and quickly sear chickenbreaston both sides, until golden but still tender and undercooked inside—about 1 or 2 minutes per side. Remove from heat.
5.Pour the drained garlic butter and spice marinade over the chicken breasts. Place the skillet in the oven and bake until cooked through, about 15-20 minutes, or until chicken breasts get to an internal temperature of 165ºF (74ºC).
6.In the meantime, add the riced cauliflower to a hot skillet with a little olive oil and butter, and season with salt, pepper, and red chili pepper flakes (if using). Saute the cauliflower rice for 2-3 minutes over medium-low, then add the reserved marinade from step 2. Cook cauliflower rice with the marinade sauce for 3-4 minutes, stirring from time to time, until the sauce has reduced slightly and cauliflower is tender. Add a little chicken stock if it gets too dry, but normally cauliflower rice will render some water.
7.Remove the baked chicken breasts from the oven. Allow resting, covered for a couple of minutes, so the meat’s cooking juice reflow for more tenderness. Slice roasted chicken breasts against the grain with a sharp knife.
8. Divide sauteed cauliflower rice into plates or bowls and top with sliced chicken breasts. Pour some of the garlic butter sauce left in the skillet onto the chicken breasts. Serve the baked chicken breasts and cauliflower garnished with lemon slices and fresh chopped parsley. An extra splash of lemon juice before serving the bakedchicken is highly recommended. Enjoy!

Tips for the baked chicken breast recipe
This baked chicken breast recipewith cauliflower uses a delighting mix of spices. Here are a few tips to make the best bakedchicken recipe ever:
- Only flip the chicken when one side is golden. Don’t flip too many times because chicken might dry out before going to the oven.
- If you’re extra hungry, you might want to double the cauliflower.
- Do not marinate the chicken for too long periods because the acids in lemon juice will break down the meat’s protein fibers and might make the texture mushy. Thirty minutes are enough for this recipe. You can marinate for a shorter time if you’re tight on your schedule.
- If you’re avoiding butter, skip it and add more olive oil.
Can we use other chicken cuts for the baked chicken?
Yes, you can replace chicken breast for chicken thighs—count2 skinless, boneless chicken thighs for one chicken breast.
How and how long to keep the baked chicken breast leftovers?
You can keep the bakedchickenbreast leftovers for up the 2 days in an airtight container. Reheat on the stove or in the microwave with a few drops of water to loosen up the sauce.
